Many opt for making the flour used in the
traditional Gujrati delicacy Handvo themselves. However, with the availability

What
you will need?

2.5 cup Handvo flour
·
4 tsp oil
·
½ tsp fruit salt (Eno)
·
200 gm spinach
·
1 tsp cumin seeds
·
½ tsp turmeric powder
·
1.5 cup water
·
1 tsp ginger green chilli paste
·
1 tsp red chilli powder
·
7 to 8 cup curry leaves
·
¼ tsp asafoetida
·
½ cup yogurt
How
to make?
Mix Handvo flour ginger green chilli paste,
chopped curry leaves, asafoetida, turmeric powder, yogurt, salt, oil, cumin
seed, and red chilli powder with 1cup of water.
After thorough mixing, add chopped spinach
and water and store it for 5 to 6 hours for fermentation.
In case you want to skip the fermentation,
add the fruit salt and store it for around 30 minutes.
Pour the mixture into a heated and oiled paniyaram pan and cook it for 5 to 7
minutes in medium heat. Next, flip the vadas and cook for the same duration.
Your Handvo Palak Vada is ready; serve it
with tomato ketchup.
Handvo with Zucchini
Handvo with Zucchini, as the name suggests
is a slight modification to the original dish with zucchini.
What
you will need?

2 cups Handvo flour
·
1 cup zucchini
·
2 to 3 tsp sesame seeds
·
¼ tsp coriander powder
·
½ tsp sanchal/soda-bi-card
·
4 tsp oil
·
¼ tsp turmeric powder
·
½ cup fruit salt (Eno)
·
½ tsp sugar (Optional)
·
¼ cup yogurt
·
1 tsp green chilli paste
·
1 tsp ginger
How
to make?
Mix all the ingredients except the
vegetables with the Handvo flour and fruit salt; store it overnight for
fermentation.
After fermentation add grated zucchini and
fruit salt to the mixture and stir thoroughly.
Optional tadka:
For making the tadka, pour oil into a pan
and heat it. Add mustard seeds and let it splutter. Next, remove it from the
stove and let it cool down. Finally, add curry patta and asafoetida.
Pour the tadka in to the Handvo mixture. Next,
preheat the oven to around 200 C; pour the mixture into an oven-safe tray and
bake it for 45 to 60 minutes.
Your Handvo with Zucchini is complete and
ready to be served hot or cold as per your taste.
